Description:

Serve as second in command of the kitchen. Responsible for production schedules and BEO’s. Food and pastry production; including that used for banquets, Tavern, Pub, Snack Bar, Employee Cafeteria and Child Care Center. Supervise production and pastry staff. Weekly schedule for banquet kitchen. Maintain highest professional food quality and sanitation standards.

Duties:

• Oversee Tavern Kitchen
• Weekly work schedule for Cooks and Dishwashers
• Assumes complete charge of the kitchen in the absence of the Executive Chef
• Work with purchasing person to insure product is on hand for needs
• Supervise prep cooks and dishwashers as needed
• Prepare food for daily functions
• Work with Chef and salespeople to insure items are as requested
• Update BEO’s as needed
• Use product in a timely and wholesome manner
• Insure temperatures of food and in refrigeration areas are at safe levels
• Monitor cleaning and rotation of product
• Label and date all products being stored
• Food sanitation and kitchen safety standards
• Manages food production, including menu planning and personnel supervision for banquet functions
• Be aware what your crew is doing at all times.
• Utilize your crews’ time efficiently and effectively.
• Have a production schedule for each function.
• Check on the snack bar at least three times a day.
• Have cleaning projects ready every day for main kitchen and Tavern kitchen.
• Do not leave without confirming that everything is done for the next day.
• Always check with your crew and offer assistance.
• Prep for next day’s buffet and banquet items
• Make sure all walk-in’s are clean and organized

Qualifications:

Minimum of 8 years experience in kitchens with 4 years recent experience in management/supervisory role.
